Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium-sized mixing bowl, combine almond butter and sweetener until smooth. Add the egg and vanilla extract, stirring until well incorporated.
  • Gradually sift in the cocoa powder and baking soda, folding into the wet mixture until combined.
  • Add a pinch of salt to enhance flavors.
  • Scoop tablespoon-sized dollops of dough onto a lined baking sheet, leaving space between each cookie.
  • Bake for 10-12 minutes until edges are set but centers are still soft.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
