Preparation

  • Gather your ingredients and assemble them on a clean workspace.
  • Prepare the kimchi by squeezing it gently with a paper towel to remove excess liquid.

Cooking

  • Spread half of the butter on one side of each slice of bread.
  • On the unbuttered side of one slice, layer half of the cheese, followed by the chopped kimchi, and then the remaining cheese.
  • Top with the second slice of bread, buttered side out.
  • Heat a skillet over medium heat and place the sandwich in the skillet. Cook for about 3-4 minutes until the bread is golden and crispy.
  • Carefully flip the sandwich using a spatula and cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.

Serving

  • Remove the sandwich from the skillet, let it cool for a minute, then slice it in half.
  • Optionally garnish with sesame seeds or chopped green onions.

Notes

Use sturdy bread to hold the fillings without falling apart. For an extra kick, consider using spicy cheddar. Keep sandwiches warm in a low-temperature oven if making multiple.
