Ingredients
  

For the Kebabs

  • 1 lb ground beef (with 20% fat content) For optimal juiciness
  • 1 bunch fresh parsley Either flat leaf or curly
  • 1 medium yellow onion Adds sweetness and depth
  • 2 tbsp seven spices (Baharat) For rich, complex flavor
  • 1 tsp salt To enhance taste
  • 1 tbsp pepper For a little kick
  • 8 pieces wooden skewers Soaked in water for 30 minutes

Preparation

  • Start by soaking the wooden skewers in water for 30 minutes to prevent burning.
  • Quarter the onion and roughly chop the parsley. Blend them in a food processor until finely mixed.
  • In a large mixing bowl, combine the ground beef with the processed onion and parsley mixture.
  • Add the seven spices, salt, and pepper. Mix thoroughly with hands.
  • Shape a portion of the meat mixture around each soaked skewer, forming an even cylinder about 1 inch thick.
  • Press the meat firmly onto the skewer and use wet hands for easier shaping.
  • Let the kebabs rest in the fridge for 30 minutes to enhance the flavors.

Cooking

  • Grill or bake the kebabs over medium-high heat until cooked through and juicy.

Notes

For richer flavor, consider adding minced garlic or dried mint. Use fresh herbs for enhanced aroma. If kebabs fall off skewers, reshape as necessary.
