Ingredients
  

For the Steak and Marinade

  • 1 lb flank steak or sirloin Juicy and tender when cooked.
  • 2 tbsp olive oil For marinade and cooking.
  • 1 juice of 1 lemon Adds brightness.
  • to taste salt and pepper For seasoning.

For the Bowls

  • 1 cup cherry tomatoes Bursting with sweetness.
  • 1 cucumber, diced For refreshing crunch.
  • 1/2 cup red onion, thinly sliced For sharp bite.
  • 1 cup mixed greens (romaine and spinach) Fresh and vibrant base.
  • 1 avocado, sliced Adds creaminess.
  • 1/4 cup Kalamata olives, pitted and sliced For a briny kick.
  • 1/4 cup feta cheese, crumbled For salty and tangy flavor.
  • 1/4 cup fresh parsley, chopped For garnish.
  • 1/2 cup hummus Store-bought or homemade.
  • 1/4 cup tahini sauce or tzatziki For creamy drizzle.
  • optional pita bread For serving.

Instructions
 

Marinate the Steak

  • Combine lemon juice, olive oil, salt, and pepper in a mixing bowl.
  • Coat the flank steak thoroughly, cover, and refrigerate for at least 30 minutes.

Cook the Steak

  • Remove the steak from the refrigerator. Grill or heat a skillet over medium-high heat.
  • Cook for about 4-5 minutes on each side for medium-rare.
  • Let the steak rest for 5-10 minutes before slicing thinly against the grain.

Roast the Tomatoes

  • Preheat the oven to 400°F (200°C).
  • Spread cherry tomatoes on a baking sheet, drizzle with olive oil and season with salt and pepper.
  • Roast for 15-20 minutes until tender and caramelized.

Prepare the Bowl

  • Layer a base of mixed greens in each serving bowl.
  • Add a scoop of hummus, followed by cucumber, red onion, avocado, roasted tomatoes, and olives.

Add the Steak

  • Layer thinly sliced steak over the vegetables.

Garnish

  • Sprinkle feta cheese and parsley over the top.
  • Drizzle with tahini sauce or tzatziki and olive oil.

Serve with Warm Pita Bread

  • Serve the bowls alongside warm pita bread.
