Preparation

  • Preheat your oven to 325°F (160°C) and prepare a muffin pan by lining 8 cups with paper liners.
  • Combine the crushed Biscoff cookies with the melted butter in a mixing bowl until the crumbs are evenly moistened.
  • Distribute the crust mixture evenly among the muffin cups, pressing it down firmly to create a compact base.
  • Beat together the cream cheese and granulated sugar until smooth and creamy.
  • Add in the sour cream and vanilla extract. Mix until well combined.
  • Incorporate the egg, stirring just until the filling is smooth.
  • Spoon the cheesecake filling into each muffin cup, evenly distributing the mixture over the crusts.

Baking and Chilling

  • Bake for 16 to 18 minutes, or until the centers are just set with a slight jiggle.
  • Allow them to cool completely, then transfer to the refrigerator to chill for at least 3 hours.
  • Warm the Biscoff spread slightly and spoon it over the top of each chilled cheesecake bite.

Topping

  • Whip the heavy cream with powdered sugar until soft peaks form.
  • Pipe or spoon the whipped cream on top of each cheesecake, finishing with the extra crushed Biscoff cookies.
