Dough Ingredients

  • 2 1/2 cups all-purpose flour The foundation of our pretzels.
  • 1 packet active dry yeast (2 1/4 teaspoons) Essential for rising.
  • 1 teaspoon sugar A touch of sweetness.
  • 1 teaspoon salt Enhancing flavors.
  • 1 cup warm water (about 110 degrees F) Activates the yeast.
  • 1 tablespoon baking soda Creates the pretzel crust.

Filling and Topping

  • 1 cup shredded mozzarella cheese Creamy, rich goodness.
  • 1 egg beaten (for egg wash) Provides a golden sheen.
  • Coarse salt, for sprinkling Adds flavor and crunch.
  • Fresh rosemary or thyme (optional, for garnish) Adds an aromatic touch.

Instructions
 

Preparation of Yeast

  • In a large bowl, combine warm water, sugar, and yeast. Allow this mixture to sit for about 5 minutes until it becomes foamy.

Mixing Dough

  • Once it’s frothy, add salt and flour to the yeast mixture. Stir until a cohesive dough forms.

Knead the Dough

  • On a lightly floured surface, knead the dough for about 5 to 7 minutes until it becomes smooth and elastic.

Rising

  • Place the kneaded dough into a greased bowl and cover it with a clean cloth. Let it rise in a warm spot for around 1 hour, or until it doubles in size.

Preheat and Prepare

  • Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.

Divide the Dough

  • Once risen, punch down the dough and divide it into 8 equal pieces. Flatten each piece gently.

Stuff with Mozzarella

  • Place 1 tablespoon of shredded mozzarella cheese at the center of each piece and fold the dough over it, pinching the edges securely.

Boiling

  • In a large pot, bring 8 cups of water to a boil and stir in the baking soda carefully. Drop each pretzel ball into the boiling water for about 30 seconds.

Transfer and Assemble

  • Using a slotted spoon, remove the pretzels and place them on the prepared baking sheet. Brush with the beaten egg and sprinkle with coarse salt.

Baking

  • Bake the pretzels in the preheated oven for 12 to 15 minutes or until golden brown.

Serve

  • Allow them to cool slightly before serving, and enjoy!

Notes

For a healthier twist, use whole wheat flour or experiment with different cheese fillings. Can be served with marinara sauce or mustard for dipping.
