Ingredients
  

Crust

  • 2 cups graham cracker crumbs, finely crushed for a tender, buttery base
  • 1/2 cup unsalted butter, melted to ensure a rich, smooth crust
  • 1/4 cup granulated sugar adding sweetness and a satisfying crunch

Filling

  • 16 ounces cream cheese, softened to achieve a dreamy, creamy consistency
  • 14 ounces sweetened condensed milk lending a hint of sweetness and creaminess
  • 1/3 cup fresh lemon juice providing that zesty, vibrant flavor
  • 1 tablespoon lemon zest enhancing the citrus aroma
  • 1 teaspoon vanilla extract for a warm, inviting back note
  • 1 cup heavy whipping cream whipped to fluffy perfection

Toppings

  • 3/4 cup lemon curd adding a luscious layer of tangy goodness
  • 3/4 cup sweetened shredded coconut, toasted for extra depth and crunch

Instructions
 

Preparation of the Crust

  • In a medium bowl, combine 2 cups of graham cracker crumbs, 1/2 cup of melted unsalted butter, and 1/4 cup of granulated sugar. Mix until the mixture is evenly moistened and the crumbs are fully coated.
  • Press the crust mixture firmly into the bottom of a parchment-lined 9x9-inch square pan. Chill this in the refrigerator for about 20 minutes to set.

Making the Cheesecake Filling

  • In a large mixing bowl, beat 16 ounces of softened cream cheese with an electric mixer until it’s smooth and creamy.
  • Add in 14 ounces of sweetened condensed milk, 1/3 cup of fresh lemon juice, 1 tablespoon of lemon zest, and 1 teaspoon of vanilla extract. Beat until it’s fully combined and creamy with no lumps remaining.
  • In a separate bowl, whip 1 cup of heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.

Assembly

  • Spread the cheesecake filling evenly over the chilled crust, smoothing it out with a spatula.
  • Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until set.

Preparing the Topping

  • Toast 3/4 cup of sweetened shredded coconut in a dry skillet over medium-low heat, stirring constantly for about 3 minutes until golden brown and fragrant.
  • Spread 3/4 cup of lemon curd evenly over the cheesecake layer.
  • Sprinkle the toasted coconut on top of the lemon curd layer.

Serving

  • Cut the bars into 16 squares and garnish each bar with a dollop of whipped cream, fresh lemon slice, and sprig of mint, if desired. Serve chilled.

Notes

Make sure cream cheese is at room temperature for easier mixing. Toasting coconut enhances flavor; chill bars overnight for faster assembly.
