Preparation

  • Toast the vermicelli pasta in olive oil over medium-high heat in a large pot until golden brown (3-5 minutes).
  • Add the ground beef, season with salt, black pepper, and garlic powder; brown thoroughly for about 10 minutes, draining excess fat.
  • Sauté the diced onions, whole serrano pepper, and chopped red bell pepper until the onions are translucent (about 3 minutes).
  • Add the diced russet potatoes and minced garlic; season again with salt and pepper, and sauté for an additional 5 minutes.
  • Blend the quartered Roma tomatoes with chicken broth (or water) and Mexican oregano until smooth, then pour this mixture into the pot with the beef and vegetables.
  • Incorporate the toasted vermicelli and a handful of fresh cilantro; add remaining broth and bring to a simmer.
  • Cover and simmer for 8 minutes until the noodles and potatoes are tender.
  • Remove the serrano pepper and cilantro before serving.
  • Ladle the noodles into bowls, garnishing with avocado slices, crumbled queso fresco, and drizzling with Mexican crema.

Notes

Serve with warm corn tortillas for a complete meal. This dish is great for family gatherings or cozy dinners and can be customized to taste.
