  • 2 pounds flank steak Choose a well-marbled, fresh cut.
  • 1 cup beef broth To enrich the sauce.
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste For a richer flavor.
  • 1 teaspoon cumin An earthy spice.

Vegetables

  • 2 medium red bell peppers Sliced.
  • 2 medium green bell peppers Sliced.
  • 1 medium onion Sliced.
  • 3 cloves garlic Minced.
  • ¼ cup chopped cilantro For fresh flavor.

Seasonings

  • 1 teaspoon salt To taste.
  • 1 teaspoon black pepper To taste.
  • 2 tablespoons vinegar Optional, for brightness.
  • ¼ cup capers or green olives Optional, for complexity.

Instructions
 

Preparation

  • Pat the flank steak dry with paper towels, season generously with salt and pepper, and let it sit at room temperature for about 20 minutes.
  • Slice the onions and bell peppers into thin strips, and mince the garlic finely.

Cooking

  • Heat a large skillet over medium-high heat and sear the steak for about 4-5 minutes on each side until it develops a brown crust.
  • Transfer the seared steak to a slow cooker and pour beef broth around it, making sure it's partially submerged.
  • In a separate bowl, combine the tomato sauce and paste, then pour this mixture over the steak.
  • Add the sliced peppers, onions, minced garlic, cumin, and chopped cilantro over the top.
  • Cover the slow cooker and cook on low for 8 to 10 hours or on high for 4 hours.
  • Once cooked, shred the meat within the cooker using two forks and let it rest for 15-20 minutes before serving.

Notes

This dish can be served with warm tortillas, over rice, or with a side salad. It can also be stored for up to 3 days in the refrigerator or frozen for up to 3 months.
