Preparation

  • Pat the flank steak dry with paper towels, season generously with salt and pepper, and let it sit at room temperature for about 20 minutes.
  • Heat a large skillet over medium-high heat and sear the steak for about 4-5 minutes on each side until it develops a beautiful brown crust.
  • Transfer the seared steak to a slow cooker and pour beef broth around it, making sure it's partially submerged.
  • In a separate bowl, combine the tomato sauce and paste, then pour this mixture over the steak.
  • Add the sliced peppers, onions, minced garlic, cumin, and chopped cilantro over the top.

Cooking

  • Cover the slow cooker and cook on low for 8 to 10 hours or on high for 4 hours.
  • Once cooked, shred the meat within the cooker using two forks and let it rest for 15-20 minutes before serving.

Notes

To enhance the flavor, consider marinating the flank steak in the spices and a bit of broth for a few hours before cooking. Customize the recipe with your favorite vegetables or spices.
