  • Once the oil is hot, add the diced onion, carrots, and celery into the pot. Cook for about 5 minutes, stirring occasionally.
  • Add the minced garlic and sauté for another minute until fragrant.
  • Stir in the diced zucchini, green beans, diced tomatoes, and tomato paste until well combined.
  • Pour in the vegetable broth and stir in the Italian seasoning, salt, and black pepper. Bring to a gentle simmer.

Cooking

  • Add kidney beans and cannellini beans, cover, and let the soup simmer for about 15 minutes.
  • Stir in the ditalini pasta and cook for approximately 8 minutes or until al dente, stirring occasionally.
  • Add chopped kale or spinach and cook for an additional 2-3 minutes until wilted.
