  • 2 tablespoons Olive Oil Can substitute with vegetable oil or butter.
  • 1 lb Smoked Kielbasa or Turkey/Chicken Sausage Provides a smoky, savory flavor.
  • 1.5 cups Diced Onion Can use shallots or leeks.
  • 2 cloves Minced Garlic Garlic powder is a good alternative.
  • 2 cups Low-sodium Chicken Broth Vegetarian broth can be used.
  • 10 oz Diced Tomatoes Fresh or canned tomatoes will work.
  • 8 oz Dry Pasta Gluten-free pasta can also be used.
  • 1/2 cup Milk or Heavy Cream Coconut milk or any dairy-free alternative works.
  • 1/2 teaspoon Salt Adjust according to your taste.
  • 1/2 teaspoon Pepper Adjust to taste.
  • 1 cup Shredded Cheddar Cheese Mozzarella or Monterey Jack can be used instead.
  • 1/3 cup Thinly Sliced Scallions Can replace with parsley or chives.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat until shimmering.
  • Add the smoked kielbasa or turkey/chicken sausage, and cook until lightly browned.
  • Toss in the diced onions and cook until golden. Add minced garlic and cook for an additional minute.
  • Pour in the low-sodium chicken broth and diced tomatoes. Stir well.
  • Bring the mixture to a boil before adding the dry pasta. Stir to completely submerge the pasta.
  • Lower the heat and let the mixture simmer uncovered for 10-12 minutes until the pasta is al dente.
  • Reduce the heat to low, stir in milk or heavy cream, along with salt and pepper.
  • Add shredded cheddar cheese and stir until melted and well combined.
  • Sprinkle the thinly sliced scallions on top before serving.

Notes

Serve with a simple green salad or garlic bread. This dish is great for meal prep, as leftovers can be enjoyed the next day.
