Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the cabbage into individual leaves, aiming for 8 large leaves, and remove the thick stem.

Filling

  • Cook your quinoa according to package instructions (usually about 15-20 minutes).
  • Heat olive oil in a skillet over medium heat, then sauté chopped onion and bell pepper for 5-7 minutes until tender. Stir in minced garlic and cumin, cooking for an additional minute.

Assembly

  • In a large bowl, combine cooked quinoa, sautéed vegetables, black beans, salt, and pepper. Mix well.
  • Take a cabbage leaf and place a generous spoonful of the filling at the base. Roll and tuck in the sides to enclose the filling, similar to a burrito.

Baking

  • Place the formed cabbage burgers on a lightly greased baking sheet, seam side down.
  • Bake in the preheated oven for about 25-30 minutes, until the cabbage leaves are tender and slightly crispy.

Serving

  • Remove the burgers from the oven, let them cool slightly, and serve with your choice of toppings.

Notes

For even more tender cabbage, consider blanching the leaves for 2-3 minutes before rolling. You can also add jalapeños for heat or substitute quinoa with other grains for variety.
