  • 1 cup black beans drained and rinsed
  • 1 medium bell pepper, diced for color and sweetness
  • 1 small onion, chopped for aromatic qualities
  • 2 cloves garlic, minced for flavor
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon ground cumin for warmth and flavor

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the cabbage into individual leaves, aiming for 8 large leaves and removing the thick stem.
  • Cook your quinoa according to package instructions until light and fluffy (about 15-20 minutes).
  • Heat olive oil in a skillet over medium heat. Sauté the onion and bell pepper for 5-7 minutes until tender.
  • Stir in minced garlic and ground cumin, cooking for an additional minute.
  • In a large bowl, combine cooked quinoa, sautéed vegetables, black beans, and season with salt and pepper. Mix well.
  • Take a cabbage leaf, place a spoonful of filling at the base, and roll it up tightly.
  • Place the cabbage burgers seam side down on a lightly greased baking sheet.

Baking

  • Bake in the preheated oven for about 25-30 minutes, until the cabbage leaves become tender and slightly crispy.
  • Remove from the oven and allow to cool slightly before serving.

Serving

  • Serve with your choice of toppings like tahini, salsa, or avocado.

Notes

For easy rolling, steam the cabbage leaves if they're stiff. Adding colorful bell peppers enhances presentation, and experimenting with spices can elevate the flavor.
