  • 8 oz Feta cheese Salty and tangy, provides bold flavor.
  • 4 oz Cream cheese Adds richness and balances the saltiness.
  • 1 tsp Chili flakes Adds a hint of spice.

For the pastry

  • 1 package Phyllo dough Thin pastry for crunch and crispiness.
  • 1/4 cup Honey Sweet and sticky, complements savory elements.
  • Olive oil Adds moisture and helps achieve a golden finish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the feta cheese and cream cheese, mash together thoroughly.
  • Add chili flakes to the cheese mixture and mix well.
  • Unroll the phyllo dough, cover with a damp kitchen towel to prevent it from drying out. Lay one sheet at a time and brush lightly with olive oil before adding another sheet.
  • Place a few tablespoons of the cheese mixture at one end of the phyllo layer and roll it tightly, tucking in the sides as you go.
  • Arrange the rolls on a baking sheet lined with parchment paper, seam side down.
  • Brush the tops of the rolls with olive oil.

Baking

  • Bake for 20–25 minutes until golden brown.
  • While baking, warm honey in a saucepan and add extra chili flakes to taste.

Notes

Consider adding herbs like fresh dill or parsley to the cheese mixture, or sprinkle sesame seeds on top before baking for added texture.
