Preparation

  • Wash the baby potatoes thoroughly under cold water.
  • Place them in a large pot filled with salted water to cover the potatoes completely.
  • Bring the pot to a boil over medium-high heat and cook for about 12 to 15 minutes until fork-tender.
  • Drain the potatoes and let them cool for a few minutes until cool enough to handle.
  • In a large mixing bowl, whisk together the white vinegar, olive oil, red onion, garlic, dill, sugar, salt, black pepper, and red pepper flakes.
  • Cut larger potatoes in half and add them warm to the pickling mixture. Gently toss to coat.
  • Transfer the potatoes to a serving bowl or storage container and refrigerate for at least 2 hours to marinate.
  • When ready to serve, stir gently to redistribute flavors and top with extra dill if desired.

Notes

Consider adding lemon juice or mustard seeds for tanginess. For crunch, include sliced radishes, and adjust red pepper flakes for more heat.
