Preparation

  • Prepare your ingredients: chop the chicken thighs into bite-sized pieces, mince the garlic, grate the ginger, and dice the onion and bell pepper.

Cooking

  • In a large skillet or a deep pan, heat the olive oil over medium-high heat. Add the diced onion and sauté until translucent, about 3 minutes.
  • Add the minced garlic and grated ginger, stirring constantly for about 30 seconds to bloom the flavors.
  • Toss in the chicken pieces, cooking until well-browned on the outside, about 5-7 minutes.
  • Pour in the soy sauce, mixing well, followed by the bell pepper and pineapple chunks.
  • Add the rinsed rice and chicken broth, stirring to ensure the rice is submerged in the broth. Bring to a gentle boil.
  • Cover the skillet with a lid and reduce heat to low, simmering for about 15-20 minutes.
  • Once the rice has absorbed the liquid, remove from heat and let sit covered for 5 minutes.
  • Fluff the rice with a fork before serving and garnish with freshly sliced green onions.

Notes

For best results, rinse the rice to remove excess starch, allowing for fluffy grains. Adjust salt and spices to taste.
