  • 2 pieces ripe avocados, pitted and peeled Ensure they are perfectly ripe for the best creamy texture.
  • 1/2 cup fresh lime juice (about 4 limes) Fresh limes add a layer of brightness and balance.
  • 1/4 cup maple syrup or honey Adjust based on your sweetness preference.
  • 1 teaspoon vanilla extract Adds warmth and depth to the flavor.
  • 1 pinch salt Elevates the flavors.

Preparation

  • Cut the ripe avocados in half. Carefully remove the pit and scoop the creamy flesh into a blender or food processor.
  • Cut the fresh limes in half and squeeze out the juice into a measuring cup, straining out any seeds.
  • Add the fresh lime juice, maple syrup or honey, vanilla extract, and a pinch of salt to the blender with the avocados. Blend until smooth and creamy, scraping down the sides as necessary.
  • Once blended, taste the mousse and adjust sweetness by adding more maple syrup or honey if desired, then blend again briefly.
  • Transfer the mousse into serving bowls or individual jars. Refrigerate for at least 30 minutes to allow the flavors to meld and the mousse to firm up slightly.
  • Enjoy your Raw Avocado Lime Mousse chilled, garnished with fresh lime zest or slices if desired.

Notes

Store in an airtight container in the refrigerator for up to 3 days. For extended storage, freeze in ice cube trays and blend again for a quick dessert snack. Experiment with flavors by adding cocoa powder or matcha powder.
