Instructions
 

Preparation

  • In a mixing bowl, toss the chicken pieces with olive oil, taco seasoning, and Cajun seasoning. Allow the chicken to rest at room temperature for about 15 minutes.

Cooking Chicken

  • In a large skillet, heat a mixture of olive oil and butter over medium-high heat. Add the seasoned chicken and sear until golden brown and cooked through, about 6-8 minutes. Transfer the chicken to a plate to keep warm.

Cooking Pasta

  • In a separate large pot, bring water to a boil and add the chicken bouillon cube. Add the Rotini pasta and cook until al dente per package instructions. Drain the pasta well.

Sautéing Vegetables

  • In the same skillet, melt more butter and add diced bell peppers, red onion, and garlic. Sauté for about 10 minutes until softened.

Combining Ingredients

  • Incorporate the Rotel tomatoes into the skillet, scraping to release any bits. Lower the heat, stir in the heavy cream, and bring to a gentle simmer. Gradually add the Velveeta cheese, allowing it to melt, then add the pepper jack and sharp cheddar cheese.
  • Fold in the cooked pasta and the earlier-prepared chicken. Adjust seasoning with extra taco seasoning to taste.

Serving

  • Serve immediately, garnished with additional cheese or cilantro if desired.

Notes

For the best flavor, consider marinating the chicken for 30 minutes to an hour before cooking. Adjust the spice level according to your preference and feel free to add more vegetables for added nutrition.
