Dry Ingredients

  • 2.25 cups all-purpose flour Sifted.
  • 1 teaspoon baking soda Leavening agent.
  • 0.5 teaspoon salt Balances flavors.

Mix-ins

  • 1 cup salted pistachios, shelled and roughly chopped Can toast for added flavor.
  • 1 cup semi-sweet or dark chocolate chunks Use according to preference.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the butter, granulated sugar, and brown sugar. Mix until light and fluffy, about 2-3 minutes.
  • Add eggs one at a time, mixing well after each addition. Pour in vanilla extract.
  • In another bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry ingredients into the wet mixture, mixing on low speed until just combined.
  • Fold in the chopped pistachios and chocolate chunks gently.
  • Scoop the dough onto a lined baking sheet, leaving about 2 inches between each ball.

Baking

  • Bake for about 10-12 minutes until the edges are golden and centers are soft.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a crunchier texture, toast the pistachios lightly before mixing into the dough. These cookies pair well with cold milk or coffee and can be served warm or with ice cream.
