Preparation

  • Sauté the vegetables: Heat the olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes until soft.
  • Brown the beef: Increase heat to medium-high and add the ground beef. Cook until browned, about 7 to 10 minutes. Drain excess fat if necessary.
  • Combine ingredients in a slow cooker: Add the sautéed mixture to a slow cooker along with the drained kidney beans, black beans, crushed tomatoes, tomato paste, and beef broth.
  • Add spices: To the slow cooker, add chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, black pepper, Worcestershire sauce, and brown sugar. Stir well.

Cooking

  • Cook the chili: Cover and set the slow cooker on low for 6 to 8 hours, or on high for 3 to 4 hours.

Serving

  • Final taste adjustments: Taste and adjust seasoning as desired.
  • Serve hot: Garnish with fresh cilantro, shredded cheddar, sour cream, and optional jalapeño slices.

Notes

Soak beans overnight for improved texture. Make it vegan by substituting beef with lentils and using vegetable broth. Customize spice levels to preference.
