Preparation

  • Wash the Yukon Gold or baby potatoes thoroughly. Cut larger potatoes into halves or quarters.
  • Place the potatoes at the bottom of the slow cooker.
  • Melt the butter in a small saucepan over low heat or drizzle olive oil over the potatoes.
  • Sprinkle the Lipton Onion Soup Mix over the potatoes.
  • Pour the beef or chicken broth over the potatoes.
  • Add salt and pepper to taste.
  • Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  • Check for tenderness with a fork before serving.

Notes
