Ingredients

  • 1 pound Lean Ground Beef Can substitute with ground turkey or chicken.
  • 1 medium Diced Onion Adds depth to the flavor.

  • 1 packet Taco Seasoning Homemade seasoning can be used.
  • 1 can Black Beans Can substitute with kidney beans or omit.
  • 1 cup Corn Kernels Use canned or frozen.
  • 1 can Diced Tomatoes Can substitute with salsa.
  • 1 can Cream of Mushroom Soup Can make homemade for better taste.
  • 1 cup Sour Cream Greek yogurt can be a lighter alternative.
  • 2 cups Shredded Cheese Cheddar is ideal; Pepper Jack adds more flavor.
  • 2 cups Crushed Doritos Use different flavors for variety.

Garnish

  • 1 medium Diced Tomato Enhances visual appeal and flavor.
  • 1/4 cup Finely chopped Green Onions For garnish.
  • 1 medium Avocado Sliced for garnish.
  • 1/4 cup Fresh Cilantro Adds freshness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the Lean Ground Beef over medium heat until cooked and browned.
  • Drain excess fat, then add the Diced Onion and Minced Garlic, sautéing until the onion is translucent, about 3-5 minutes.
  • Add the Taco Seasoning, stirring to combine.
  • Incorporate the Black Beans, Corn Kernels, and Diced Tomatoes, mixing until everything is evenly combined.

Mixing

  • In a large bowl, blend the Cream of Mushroom Soup with Sour Cream until smooth.
  • Fold in the beef and vegetable mixture, then stir in 1 cup of Shredded Cheese.

Assembly and Baking

  • Pour half of the mixture into a greased 9x13 inch baking dish and spread evenly.
  • Layer crushed Doritos on top, then pour the remaining beef mixture over it.
  • Add a final layer of the remaining Shredded Cheese on top.
  • Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and slightly golden.
  • Let it sit for a few minutes before serving, then top with Green Onions, slices of Avocado, Cilantro, and Diced Tomatoes.

Notes

Avoid overcooking the ground beef. For a lighter option, use ground turkey or chicken. Store leftovers in the refrigerator for up to 24 hours and it also freezes well.
