Preparation

  • Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  • In a dry skillet over medium heat, toast the pine nuts for 3-5 minutes until golden and fragrant.
  • In the same skillet, add olive oil and minced garlic. Sauté for about 30 seconds until fragrant but not browned.
  • Add halved cherry tomatoes to the skillet, season with salt and pepper, and cook for 5-7 minutes until they start to burst.
  • Add shredded chicken and cooked spaghetti to the skillet, pouring in a splash of the reserved pasta water.
  • Stir in chopped basil and parsley, adjusting seasoning as desired, including optional red pepper flakes.
  • Serve by dividing spaghetti onto plates and topping with torn burrata cheese, finishing with a drizzle of olive oil.
