Ingredients

For the Peppers

  • 4 pieces Bell Peppers Available in shades of red, yellow, or green

For the Filling

  • 1 pound Ground Italian Sausage For rich, savory flavor
  • 1 cup Long Grain White Rice Cooked
  • 3 cloves Fresh Garlic Finely minced
  • 1 medium Onion Diced
  • 1 cup Marinara Sauce For depth and moisture
  • 1 cup Mozzarella Cheese Shredded

Instructions

Preparation

  • Cut the tops off the bell peppers and remove the seeds and membranes. Rinse and pat dry.
  • Par-boil the peppers in boiling water for about 3 minutes, then transfer them to an ice bath.

Make the Filling

  • In a large skillet over medium heat, add the ground sausage and brown it, breaking it into pieces.
  • Add the diced onions and chopped pepper tops, cooking until the onions are translucent.
  • Stir in the minced garlic and cook for 1 additional minute.

Mix in Rice

  • Incorporate the pre-cooked rice, marinara sauce, and seasonings. Allow to simmer for about 5 minutes.

Stuff the Peppers

  • Place the prepared peppers upright in a baking dish and fill each pepper with the mixture.

Cheese it Up

  • Top each stuffed pepper with mozzarella cheese.

Bake

  • Cover the dish with aluminum foil and bake at 350°F for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is golden.

Notes

For added flavor, consider adding Italian seasoning or red pepper flakes. Substitute the Italian sausage with ground turkey for a healthier option.
