Preparation

  • Lay each chicken breast flat and carefully slice a deep pocket into the thickest side.
  • Stuff the pockets with fresh spinach leaves, dried cranberries, and slices of brie cheese.
  • Secure openings with toothpicks or twine.
  • Drizzle olive oil over each stuffed chicken breast, coating all sides.
  • Sprinkle garlic powder, dried thyme, paprika, salt, and black pepper over the chicken.

Cooking

  • Heat an oven-safe skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

Serving

  • Remove from the oven and let the chicken rest for about 5 minutes before serving.

Notes
