Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add the ground beef or turkey. Brown the meat for about 7-10 minutes.
  • Drain any excess fat from the meat.
  • Sprinkle taco seasoning over the meat and add water as instructed on the packet. Simmer for 5 minutes.
  • Remove from heat and stir in the ranch dressing.
  • Place mini tortilla cups on a baking sheet and fill each with the taco mixture.
  • Sprinkle cheddar and Monterey Jack cheese over each filled cup.
  • Bake for 10-12 minutes until the cheese is bubbly and golden.
  • Once done, top with diced tomatoes and cilantro before serving.
  • Serve warm with bowls of sour cream and guacamole for dipping.

Notes

For a quicker preparation, use store-bought taco seasoning and mini tortilla cups. Ensure to watch the cheese while baking to prevent over-browning.
