Ingredients
  

For the Tzatziki Sauce

  • 1 cup Greek yogurt Use full-fat for a richer flavor.
  • 1 piece cucumber Grated and squeezed to remove excess water.
  • 2 tablespoons fresh dill Chopped.
  • 1 tablespoon lemon juice Freshly squeezed.
  • 2 cloves garlic Minced.
  • Salt and pepper To taste.

For the Salad

  • 2 pieces grilled chicken breasts Diced.
  • 1 cup cherry tomatoes Halved.
  • 1 cup bell peppers Diced.
  • 1 cup lettuce Shredded (optional).

Instructions
 

Grill the Chicken

  • Heat your grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side or until cooked through. Let them rest before dicing into bite-sized pieces.

Prepare the Tzatziki Sauce

  • In a mixing bowl, combine the Greek yogurt, grated cucumber, dill, lemon juice, minced garlic, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Chop the Vegetables

  • Dice the bell peppers and halve the cherry tomatoes while the chicken is grilling. Shred the lettuce if you’re opting to include it for added crunch.
