Ingredients
  

For the crust

  • 1.5 cups crushed graham crackers Use finely crushed for an even texture.
  • 0.5 cup melted butter Ensure butter is fully melted.
  • 2 tablespoons sugar Granulated sugar works best.
  • 1 each zest of lime Fresh zest for the best flavor.
  • 1 tablespoon lime juice Freshly squeezed preferred.

For the filling

  • 16 oz cream cheese, softened Softened at room temperature.
  • 1 cup powdered sugar Sifted for smooth incorporation.
  • 1 teaspoon vanilla extract Pure extract for best flavor.
  • 2 cups watermelon puree Fresh watermelon blended until smooth.
  • 2 teaspoons gelatin (optional) Dissolved in warm water if used.
  • 2 tablespoons lime juice Freshly squeezed for brightness.

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine crushed graham crackers, melted butter, sugar, lime zest, and lime juice. Mix until the crumbs are evenly coated.
  • Press the mixture firmly into the bottom of a greased 9×9 inch baking dish. Bake for 10 minutes, then set aside to cool.

Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add powdered sugar and vanilla extract while mixing until well combined.
  • Add the watermelon puree and lime juice to the cream cheese mixture. If using gelatin, dissolve it in 2 tablespoons of warm water and mix it in as well. Beat until everything is combined and the filling is creamy.

Assembly and Setting

  • Spread the watermelon cheesecake filling evenly over the cooled lime crust. Cover the dish and refrigerate for at least 4 hours, or until the filling is firm.
  • Once set, cut into bars and serve chilled. Garnish with whipped cream or fresh mint for a beautiful presentation.

Notes

For an extra flavor punch, consider adding extra lime juice or zest to the filling. Substitute half of the cream cheese with Greek yogurt for a lighter twist. Sprinkle toasted coconut flakes on top before serving for added crunch. Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to one month.
